Chenopodium nuttalliae - (Wa-zont-lay) This ancient crop was one of the most important grains grown by the Aztecs, alongside Amaranth, Corn and Chia. Closely related to lamb's quarters. All parts of the plant are edible; both the young leaves and florets are cooked in soups, sauces and fritters and are popular in Mexico to this day. Tolerant of both heat and drought.
