New for 2025 - Tragopogon porrifolius - True Salsify; this one is a different species than Scorzonera (aka Black Salsify). Long slender roots, Steph likes to blanch them and then roast them. Also known as Oyster Plant, because their mildly mineral flavour is said to be reminiscent of oysters. The leaves are pleasantly bitter and quite nice, they can be eaten as a green like endive. Biennial plants. Harvest in the fall, or early spring after they overwinter. Beautiful blue flowers appear in the second year.
