New for 2025 - Cichorium intybus - Dense rosettes of tall leaves, they look like big dandelions with vibrant red stems. Mildly bitter, the greens are delicious braised or cut young as part of a mesclun mix. Succession sow for a continuous supply of baby leaves. Hardy perennial, they don't bolt until their second year. Their famous blue flowers are an event when they do.

Sowing Chicory grows best in cool weather, sow in early spring or fall. Can be direct sown starting as early as the soil can be worked. Or start them in trays indoors 4 weeks beforehand and transplant.
