Sokoyokoto Celosia - Lagos Spinach
Celosia is most often grown as an ornamental in North America (I can see why; they’re stunning plants), but in west Africa they’re among the most widely eaten greens. While all celosia varieties have edible leaves, this one is particularly tender and leafy. The greens are traditionally cooked and stewed.
Very heat tolerant, they can be sown continuously through the warm frost-free months. Best picked when the leaves are young and before the flowers come out in full force. As the plants mature in late-summer, they reach 5-6' with masses of deep-pink blooms, hundreds per plant. The flowers dry beautifully for arrangements. 100+ seeds
