Chickweed
Stellaria media - Our favourite wild green! Chickweed is a delicately branching annual herb. Extremely cold hardy, growing dense mats of foliage during the cooler months of the year (early spring and fall are their peak times, but they can even be harvested from under the snow). We love to eat them chopped fine and added to sandwiches, soups, noodle bowls and salads. You've got to try them as a fritter!
Although considered a common 'weed', I find them to be among the least bothersome weeds in our garden. They have shallow root systems are are easy to remove at planting time. We have a few areas of particularly moist soil on the farm where chickweed proliferates after our cultivated crops are finished for the season, seems like a beautifully passive polyculture system to me. You possibly already have these growing in your garden, but if you don't I would recommend them. Several hundred seeds
