Spanish Red Thyme

New for 2025 - Thymus zygis - Short upright perennial thyme native to Iberia and Morocco. Tough and drought tolerant plants. Small white flowers are a favourite of bees. Incredibly strong and pungent when fresh! Steph made a wonderful infused honey with the fresh cut stems. When dried they become a little more mellow, and make a nice tea.
